Feijoada
Black bean stew with pork, often served with rice, greens and orange slices.
Ingredients
- 1ยฝโ2 cups black beans
- 1 lb / 450 g pork
- 1 lb / 450 g sausage
- 1ยฝโ2 cups rice
- 1โ2 cups prepared collard greens
- salt, to taste
- 1โ2 tbsp neutral oil or olive oil
Method
- Rinse the rice, grains, beans or lentils if needed, then drain well.
- Cook aromatics in oil or butter until fragrant.
- Add the main ingredients for Feijoada and stir to coat.
- Add liquid, cover and cook gently until tender.
- Rest off the heat for a few minutes, then fluff or stir carefully.
- Serve with herbs, sauce, pickles, salad or the traditional side dish.
Cooking note: This is a simple home-cook version of Feijoada. Traditional versions in Brazil can vary by region, family and occasion.
